Thailand’s Hua Hin of course.<p></p><p>Literally fit for royalty, Hua Hin is the summer getaway for Thailand’s ruling monarchy and elite. About two to three hours away from Bangkok by coach, many locals also now use the beachside resort town for their weekend holidays.<span></span></p><a name='more'></a><p></p><p>With development throttled by Royal Decree, and no building to go up beyond three stories unless it has special permission, Hua Hin has managed to retain its traditional laid-back, seaside character.</p><p>The ‘oldest’ resort town in Thailand, it still only sees around 90,000 residents calling the area home, and without an airport connection, there’s a tranquillity to the area not seen in more built up regions like Phuket.</p><p>Hua Hin’s idyllic white-sand beaches are a sight to behold, running 5kms long, it is rumoured to be one of the reasons why <a href="https://en.wikipedia.org/wiki/Prajadhipok" target="_blank">King Prajadhipok</a> (Rama VII) built his summer palace, Wang Klai Kang Won “Far from Worries”, in 1928.</p><p>Hua Hin, can not only boast to be the holiday town of the Royals, but also has another claim to fame. The township and surrounds is home to the highest density of world class golf courses anywhere in Thailand.</p><p>In this backdrop of relaxation, the ‘spa culture’ in Hua Hin is worth a mention. Whilst Thailand is renowned for its wellness tourism, the spa experience is forefront in a complete Hua Hin itinerary.</p><p>Home to arguably the world’s best spa, consistently named in Condé Nast’s top three and awarded Luxury Travel’s Best Spa in the World in 2008, Chiva-som has seen a whole slew of the rich of famous step through their doors. Said to be Hollywood’s favourite spa property, Chiva-som doesn’t come without a price tag.</p><p>Of course, unwinding in Hua Hin doesn’t have to bankrupt a travellers account, with most hotels and resorts offering either an in-house spa or access to spa facilities – or travellers can be a little more adventurous and try out the array of massage parlours in the township.</p><p>The Hua Hin night markets are worth a quick glimpse as well, while not as bountiful as Bangkok’s block-wide sprawls, they have a character of its own – and many locals believe that souvenirs such as silk and carvings can be gotten here cheaper than in the capital; of course, bargaining is essential.</p><p>From relaxed three-star beach front properties, to the decked-out five-star locations that are almost a township to themselves, Hua Hin has a property to suit every budget – with even the higher end of town ‘cheap’ compared to average global rates.</p><p>For business travel, Hua Hin can cater small to medium-sized events without a hitch. In partnership with Chiang Mai University’s Doi Suthep Nature Centre and Forest Restoration Research Unit, the hotel’s volunteers have painstakingly conserved and restored forest within Doi Suthep-Pui National Park – Chiang Mai’s green backdrop and premier natural tourist attraction.<span><a name='more'></a></span><p></p><p>In addition to tree-planting, Meliá Chiang Mai staff also collected tree seeds in the natural forest, raised tree seedlings in nurseries, weeded around planted trees, applied fertilizer and monitored the survival and growth of the planted trees. Activities took place at Ban Pong Yang Nai, the Huay Kaew-Wang Bua Ban Nature Study Trail, Mon Cham and Doi Suthep Research Tree Nursery.</p><p>“Home to more than 300 bird species and nearly 2000 species of ferns and flowering plants, Doi Suthep-Pui National Park is akin to the lungs of Chiang Mai,” said Meliá Chiang Mai’s general manager Marc Selinger. “All of these activities by our dedicated volunteers are carefully researched and planned, to ensure proper forest-ecosystem restoration, aiming to recover the structure, biodiversity and ecological functioning of Chiang Mai’s original forests.”</p><p>The restoration efforts have seen the team help raise and plant tree species characteristic of the park’s original forest ecosystems— including Adenanthera pavonina, Syzygium cumini and Terminalia bellirica.</p><p>The hotel’s volunteers are planning to embark on further restoration activities in the national park throughout 2024. They started working with the university’s subsidiary units in June 2022 to regenerate forest, as part of Meliá Chiang Mai’s ongoing “Meliá Go Green” initiative. The unique hard cheese was initially created to use leftover curd trimmings. Made from unpasteurized cow’s milk, Forest Tail is aged for a minimum of five months. It shares characteristics with French Tomme, English Cheddar and flavoured Gouda. And that’s a fact.<span><a name='more'></a></span><br /><br />Like what, you might ask? Well, when I stumbled across a Google search statistic that showed 170 people a month were searching for ‘Chiang Mai Surfers’ that hit pretty close to home – given that I live in Chiang Mai – and I thought, damn that’s one thing I haven’t done here in ages … gone to the local beach for a surf.<br /><br />Well, sorry to break it to you like this, surfer dudes, the nearest beach to Chiang Mai is probably around 750 km away, and that’s probably in Burma. (Burma, yeah dude, that’s another country in Asia. No, dude, Asia’s a continent. Yeah, we’ve got beaches in Thailand because we’ve got 2705 kilometres of shoreline, just not in Chiang Mai, so chill.) <br /><br />Little known fact #1: Chiang Mai province is actually home to five of Thailand’s eight highest peaks but I’ll deal with that in a later blog.<br /><br />So I thought a few bare facts for anyone looking at Thailand travel (or Thailande, Tailand, Koh Thailand or even Thialand as many people mistype it) would be a great place to start this journey.<br /><br /><span style="font-weight: bold;">Local Thai customs:</span><br /><br />Thailand is one of the most devout Buddhist countries in the world, with over 90% of its population practicing Theravada Buddhism. Monks and temples are respected and revered, so do use common sense in terms of modest dress and behaviour in their vicinity. The gesture of respect is the Wai, pronounced why. (There’s no truth in the rumour Tom Jones’ song Wai, wai, wai Delihah was written after he had to continually remind his girlfriend to show respect). The wai is performed by raising your clasped hands in a praying position in front of your face with your fingertips about level with your chin plus a downward tilt of the head.<br /><br />The royal family is absolutely revered by the Thai people, and rightly so. At cinemas they’ll play the royal song, and often at 6pm on a Sunday evening in public markets and stations. It is correct to stand still and silent for the duration. <br /><br />For years, Thailand has been known as the Land of Smiles. It is not a put on for tourists – I’ve seen plenty of evidence of this well off the beaten track. If you smile it shows your heart is in the right place (jai dee), and you will get an excellent return on investment with a gleaming smile back. A smile is like a master key, and you’ll find it opens the door to better service, better treatment, and possibly friendships. But at very least YOU will feel better and happier within yourself.<br /><br />The one golden rule for Thais is <span style="font-style: italic;">sanuk</span> (fun). If something’s not <span style="font-style: italic;">sanuk</span>, forget about it.<br /><br /><span style="font-weight: bold;">Key Thai phrases:</span><br /><br />I’m going to do a few blogs just on the Thai language alone. You see I speak it like a native, unfortunately not a native of Thailand! It’s tremendously tricky tonal language with five tones for the same word which give each a completely different meaning. Yes, really. Hardly a day goes by that I don’t inadvertently cause my Thai friends to howl with laughter for all the wrong reasons. But here are a few simple phrases that – with appropriate theatrical gesturing – will win you a few friends in Thailand:<br /><br />Phrase pronunciation meaning<br /><br />Sawasdee khrap/ka Saa wah dee krub /car Greeting <br />(Males use khrap as polite particle suffix, females use ka. Hey, it’s a tropical country, what’d you expect? But …<br /><br />North of Bangkok: From June to October southwest monsoon and rains.<br />November to February, mostly dry.<br />March to May, dry and increasingly hot.<br /><br />South of Bangkok: On west coast, from April to October southwest monsoon. On east coast monsoonal rains from September to December. The south is generally wetter than the north.<br /> <br /><span style="font-weight: bold;">Currency:</span><br /><br />Thai baht. When the rains cease in November, little islands appear. They are eagerly occupied by market gardeners and planted with vegetables. In June or July, the little islands vanish, save for a few unusually solid ones, which last from year to year; but even these seemingly permanent islands may be swept away during a heavy flood.<span></span></p><a name='more'></a><p></p><p>The island known as Bullfrog Island had been in existence for at least thirty or forty years. It was separated from the riverbank by a channel about fifty feet wide. In the dry season, this channel was a mere ditch, by the end of the rains a swiftly flowing stream, in flood-time a raging torrent.</p><p>For four or five years two men owned vegetable gardens on Bullfrog Island. Uncle Nuan was a man of fifty, a widower, known to all the neighbours as the meanest man for miles around. He shared the island with Noi Larn, a jolly young bachelor of twenty-three. There was little love lost between the two men. </p><p>Noi Larn called his neighbour "Uncle Tightfist" and the older man retaliated with "Master Wastrel." Both were good gardeners and did well with their vegetables, but while Uncle Nuan had saved a tidy sum, Noi Larn never had a cent left over and had even borrowed a hundred bahts from his fellow islander.</p><p>One September morning a few years ago, Uncle Nuan awoke to find the south end of the island under water. It was the beginning of the biggest flood within living memory. The waters were already lapping the walls of his hut. He hurried to rouse Noi Larn. After a look around, the two men decided that there was nothing to be done but abandon the island. The channel between them and the riverbank was by this time a roaring whirlpool of water that was rapidly rising. There was a rough bridge, made of two bamboos, across the channel, but it was clear that this would soon be carried away by the torrent.</p><p>Uncle Nuan was terrified. "Nothing can save me," he wailed, "I cannot swim, and I dare not cross that bamboo bridge. The handrail is broken, and I shall fall into the river and be drowned." </p><p>Noi Larn was not worried. He was a big, strong fellow, and a good swimmer. Though the rush of water was fierce, he felt quite capable of tackling a channel only fifty feet wide. However, he realised that his companion was in a tight spot, so he said: "Get onto my back, Uncle Tightfist, and I will carry you across the bridge. But it was his only chance. So up he got onto Noi Larn's back. Then, slowly and gingerly, like Blondin crossing the rapids of Niagara, the young man bore his trembling companion across the raging stream.<p></p><p>When they reached the opposite bank, Uncle Nuan was profuse in his thanks. "My dear son Larn," he whimpered, "you have saved my life at the risk of your own. How can I ever reward you?"</p><p>"That's easy enough," replied Noi Larn. "Just let me off that hundred bahts I owe you, and we'll call it square." Uncle Nuan's face fell. "You are asking too much," said he. "A hundred bahts is a lot of money. But I do not want to seem ungrateful. I will let you off ten bahts. Pay me back ninety bahts, and we will call it a deal." "What!" cried the young man. "You mean old scoundrel.</p><p>If you only value your life at ten bahts, it is not worth bothering to save it!"</p><p>Then, lifting Uncle Nuan in his arms, he cried: "I am going to carry you back to the island. Stay still, or I will chuck you into the river."</p><p>Suiting the action to the words, he once more stepped upon the bamboo bridge and carried the miserable old fellow back to the island. At the moment when he set foot on land, the bridge collapsed.</p><p>"Here we are, Uncle Tightfist," said Noi Larn. "Now you can shift for yourself. But I do not want to be in your debt. Take this ring. It is worth more than a hundred bahts. So I am paying my debt in full, plus interest."</p><p>Then he plunged into the channel, and in a few minutes was safe on the opposite bank.</p><p>Half an hour later Bullfrog Island had vanished completely beneath the waters of the flood. He was a bit worried about spending 10 days in Phuket with me and not having waves to keep him occupied, but I had assured him that he would have lots of time to chill out, rest his back and have lots of massages and spa treatments; so he was finally convinced 10days would be OK.<span></span></p><a name='more'></a><p></p><p>After arriving at our hotel, The Chedi Surin Beach, in the darkness and not being able to see the beach, we had a quick shower and jumped in a 'tuk tuk', heading straight to the gorgeous Baan Rim Pa for dinner and a few (too many) cocktails.</p><p>The next morning we awoke at 8am, both with slight hangovers from the flight and cocktails and thought we’d hit the beach for a swim in the ocean before breakfast. Yes – Thailand<span></span></p><a name='more'></a><p></p><p>So I thought it was time that I wrote about my ‘something different'. Still Thailand, still amazing, but another area of this beautiful country that everyone should explore.</p><p>My something different is <a href="https://www.tourismthailand.org/Attraction/ko-samui" target="_blank">Koh Samui</a>.</p><p>Located a short hour flight from Bangkok International airport, Koh Samui is approximately 229km in size and is Thailand’s third biggest Island.</p><p>Koh Samui still has the character that you would expect from Thailand but not so much hustle and bustle. The beach where we stayed (<a href="http://www.chawengregent.com" target="_blank">Chaweng Regent Beach Resort</a>) was excellent and visited every day while I was there. I also noticed a lot more young families while in Koh Samui again confirming its more restful atmosphere.</p><p>I have to add to this blog a final note about my husband’s golf adventure at Bophut Hills Golf Club (Edit: now closed) He would tell you that the 3 par/9 hole course was a fun however I would tell you that if it was not for his caddy we would have been there all day! I am not sure if you can make out the picture however there is a girl in that bush looking for his ball – to make it worse think this was the first shot! This darling lady earned her tip! Me, I just loved walking around the mountains having a laugh – would have been nicer if we were able to walk in a straight line, however. Even though quite often that’s exactly what I was (oh the irony)!</p><p>But upon hearing rave reviews from a colleague recently I decided enough was enough. Yes there were Backpackers. It has been known as a backpackers' haven long before Leonardo DiCaprio popularised it in the movie adaptation of Alex Garland’s novel ‘The Beach’. But it wasn’t only for backpackers; there were families, elderly couples, young couples all mellowing out and enjoying the scene. We decided to join them. We found a bar ordered our Singha’s and proceeded to eat fried grasshoppers.<p></p><p>Yes, you read correctly, fried grasshoppers! Something else I had never done in Thailand.</p><p>I mentioned there were plenty of street stalls, there were also plenty of food stalls. Selling everything (cheaply) from the traditional Pad Thai and spring rolls to the um, well, not-so-traditional fried grasshoppers, scorpions and many other insects I squash at home. Not to eat, but because I am just plain scared of them! So when they were produced by one of the group members as a snack I almost passed out. After watching everyone else try one (and not throw-up) I thought to myself, I overcame one inane prejudice tonight why not another.</p><p>So I ate the grasshopper. I chewed and I swallowed it. And whilst I drew the line at the fried scorpions, I can be proud that I let my inhibitions down enough to enjoy this animated scene and have a night that was memorable.</p><p>But that is the great thing about travelling, isn’t it? The breaking down of misconceived notions and prejudices you have created in your own mind when there is often no basis for it to begin with.</p><p>Whether it be the actual destination itself, the people or something as exotic as eating fried grasshoppers, overcoming your fears and prejudgements when travelling allows you to actually have ‘experiences’ and often enjoyable ones at that. And I’m reminded of the quote by Henry David Thoreau used in the movie ‘Dead Poets Society’.</p><p> “I went into the woods because I wanted to live deliberately. The bed is the size of an inner city studio apartment, the bathroom has brass fittings fashioned into branches, leaves and birds and the view from the plantation-shuttered window is over craggy cliffs and a languid sea.</p><p>Out the back of my two-storey villa, there is an outdoor spa surrounded by decking that looks a little bit ‘Hot Tub Time Machine’ in the sense that it just cries out for debauchery. Back in the frostily climate-controlled room, there is a cornucopia of fresh fruit, orchids and marigolds scattered around the room and a general sense of nature encroaching in a pleasurably wild way.</p><p>The spa villa has a day bed housed in a tiki hut outside the door and there is the choice of an infinity pool or tepid saline sea no more than 50m from the front door.</p><p>This place looks exactly like the brochures. No re-touching. No foul smells that disturb the perfection. A glass of wine or three always seems to make my cooking taste even better.<span><a name='more'></a></span><p></p><p>So when I get the chance, I love to take cooking classes to learn something new.</p><p>Last time I was in Thailand, I took a class at Gap’s House. It was full of character, and taught me about the five sensations of Thai cooking: sweet, salty, spicy, sour, and crunchy. Get the ratios right, and you have yourself a recipe for a delicious meal.</p><p>But this time I wanted to take it up a notch. I’m not really a beginner anymore. I know my way around a cutting board and how to craft a Thai meal.</p><p>I discovered that the Thai Cookery School does Master Classes - basically one-on-one sessions with Chef Sompon Nabnian, a man who I would come to learn was the head of a sprawling business empire.</p><p>I signed up to do a beginner class during the day for AUD$33. After the end of the beginner class in the afternoon, my newfound partner Spanish Kim and I would tackle a Master Class creating five dishes in three hours under the tutelage of Chef Nabnian.</p><p>In the morning, after a tour of the markets where we picked up a slew of ingredients for the day, we arrived at the cooking school.</p><p>***</p><p>Thai Cookery School</p><p>The school was founded in 1993 by Chef Nabnian, and has to be one of the most professionally organised cooking classes I’ve been on.</p><p>Upon arrival you’re given your station, and then ushered into an air conditioned training room where the Chefs cook and demonstrate the dish you’re about to prepare.</p><p>As an added bonus, there’s an angled mirror above the training station where you can look directly down onto the station: no more craning and peering. Just look up.</p><p>***</p><p>We cooked six dishes varying in difficulty, and our group of 20 had no struggles at all. We covered the basics of pad thai (or in this case, fried big noodles with chicken and sweet soy sauce), yellow curry chicken, steamed fish in banana leaves, chicken with cashew nuts, a spicy prawn salad and finally bananas in coconut milk.</p><p>If it sounds delicious, I assure you: it was.</p><p>After the beginner class, Spanish Kim and I teamed up with Chef Nabnian for the Master Class. Since there were only two of us, we got to pick and choose the dishes to cook. We came up with:</p><p>• Barbecued prawns with a kaffir lime dressing</p><p>• Fried pork spare ribs with garlic</p><p>• Lemongrass sticks with minced chicken, prawns, and pork</p><p>• Banana flower salad</p><p>• And the ultimate: Chiangmai Noodles with curry sauce and chicken, or the famous Khao Soi Gai: staple food of the north.</p><p>It was intensive and educational, and worth every penny of the AUD$90 we paid. Kim is a cook in Spain, so he’s taking his certificate back with him to move up the corporate ladder.</p><p>Me? Chiang Dao is where the rice field meets the jungle and home to a weekly market full of ethnic charm. Villagers from miles around head for Chiang Dao every Tuesday to shop for essentials and trade their homegrown harvests. <span><a name='more'></a></span><p></p><p>The market stretches for a kilometre through the main street. Most vendors are selling fabrics or fried food, like deep-fried bananas or spicy fish cakes (todd man pla). My favourite patch is a shady corner where charming old ladies sell rare forest foods from deeper in the hills. Tree ferns and wild greens are easy to find, but keep a close eye out for wasp larvae, river crabs, edible orchids and crunchy fried grasshoppers. </p><p>In the cooler months the roads leading into Chiang Dao are thick with roadside stalls selling Khao Lam, sticky rice stuffed into bamboo sections. It's much cooler after dark than down in Chiang Mai, and you need to rug up a little. Mist often fills the valleys in the first light, until the sun comes out to brighten the jungle. <p></p><p>As a guest of some hill tribes or a day visit from Chiang Mai the charms of Chiang Dao are worth your time.
